Age of the vines: 15 years old.
Vinification : grapes are handpicked, sorted and destemmed. Gravity racking . traditional vinification in concrete vats. The fermentation takes place for 28 to 30 days with pigeage (punching of the cap) with low pressure. Ageing on fine lees for 8 months in concrete vats. Light filtration. No fining.
