Carignan, Grenache, Mourvedre, Syrah
Terroir: Boutenac is a special terroir with poor soils on a limestone base. Known locally as Corbieres “golden triangle”.
Vinification: Grapes are hand harvested with a very selection of the best vines. Grapes are destemmed and fermentation starts naturally in stainless steel.
Old barrels (3 to 5 wines) are filled up by gravity. Juices finishes the alcoholic fermentation and malolactic fermentation in barrels . Wine is aged for 17 months.
Only the best barrels will be blended to create this wine.
No finning and no filtering.
