Terroir: Clay and limestone soil with puddingstone, "Poudingue" in french
Average age of vines: 35 years old
Vinification: Grapes are hand-harvested around Mid October/Beg of November. Grapes have to be very ripe but they are not looking for "passerillage". They want to keep freshness, fresh aromas of exotic fruits. Wine is vinified in stainless steel tank, and bottled in the Spring.
