Terroir: limestone soil
Age of the vines:35 to 48 years old.
Vinification: Grapes are hand harvested. The whites are pressed up on the mountain and the juice is piped from the vineyard to the cellar located down the valley. Ageing on lees in stainless steel vat, during 11 months without indigenous yeasts. No chaptalisation. No finning. Bottled unfined and unfiltered.
