Vinification: Grapes are hand harvested. Red grapes varieties are put in tanks, and the entire tanks are brought down on cables car for fermentation. Natural fermentation and ageing on lees with indigenous yeasts, in stainless steel vat. No finning. No chaptalisation. Bottled unfined and unfiltered.
