~ THE CHEF XABI FROM TRANGALLAN
Xabi grew up in Spain, and quickly became interested in wine. He worked in Barcelona for several wine shops, and came to London for the first time to work for a wine importer. In 2011, he decided to open his own restaurant in Stoke Newington called Trangallan with a old friend who was a Chef. Initially Xabi was running the floor along with the wine list, whilst his friend was in charge of the kitchen. However, his friend had to move back to Spain and instead of looking for someone else, Xabi took a culinary plunge and took over the kitchen in Trangallan. Xabi did confess the other day "I have never wanted to become a Chef, but I always had an hidden love for cooking. I am 100% self-taught. I have actually more wine based qualifications than in cooking (Sommelier certification in Spain, Master in Viticulture, WSET Diploma in London...). But when I cook, I just can imagine the wine pairing behind... I always look for tension, salinity and perfect balance in dishes". In a nutshell, Xabi is a bit like a sommelier in a kitchen.This is why Xabi is just the perfect match for the wines of our Galician winemaker "Forjas del Salnes'.
~ THE WINE PRODUCER RODRIGO MENDEZ FROM FORJAS DEL SALNES
The Mendez family always had vineyards around the Meano village in the heart of Salnés, Rias Baixas. Rodrigo's grandfather was one of the figures behind the creation of the apellation Rias Baixas in 1980. At the time, the family was still selling most of the grapes to other bigger producers, and only a tiny little amount was kept to make some wines exclusively dedicated to the family consumption.
Rodrigo started his own little project of Bodegas Forjas Del Salnes in 2005. His plans were to focus a bit more on producing red wines, using very old grapes varieties Caino, Loureiro and Espadeiro, all planted by his father. He also wanted to show the potential of his old Albarino vines which have never been affected by phyloxera thanks to the granitic soil type.
Rodrigo will travel to London for this special evening to share his passion and his fabulous wines !
