Xavier first wanted to make a scientific career. A few years ago, he met a passionate winegrower who became hos mentor. This man changed his destiny. In 2009, Xavier decided to change his career plans and to produce wine. Having inherited from his family a house, a cellar and a piece of land with two vineyards in Breze, near Saumur, he had everything he needed to start his new project.

Right from the start Xavier chose to make wines that would correspond to Socrate's philosophy: "first of all, do not do any harm!". The estate's area is less than 2 hectares with vineyards scattered here and there.  But thanks to the diversity of terroirs in the area, this is far enough to produce very complex and unique wines. Yields are between 10 and 20 HL/ha. Most wines are made from the traditionnal grapes of the region: Chenin Blanc, Gamay and Cabernet Franc. Xavier's search for perfection has no limits. Wine needs time, and he knows that. The 2000 vintage is just going to be released this year...
